Recipes for your Oysters

Classic Mignonette

¼ cup red wine vinegar

1 tablespoon minced shallot

¼ teaspoon freshly ground black pepper

Preparation

Stir vinegar, shallot, and pepper in a small bowl. Drizzle over oysters.

“you can add many things to this classic recipe I love using seasonal fruit like Peaches and mint to give it a refreshing twist. I also change the vinegar to champagne Vinegar”

The Sea Pig Hot Sauce

20 Thai bird chili (they are Hot)

15 cloves of garlic

3 limes juiced

¼ cup water

3 Tbsp fish sauce

1 Tbsp salt

¼ cup cilantro fine chop

de-stem the chilis and put everything in the blender except chopped cilantro and blend till smooth, after everything is blended add cilantro and mix.

These chilis are hot you can always sub with jalapenos or other chilis or you can even charr the chilis to give it a smoky taste.
