Recipe Time

Cuban Mojo

5 onion small diced

20 garlic cloves minced

20 limes juiced

1 tbsp salt

1 cup oil

Cook the onion and garlic in oil till golden brown and fragrant. Then add lime juice and let simmer for 15 minutes. Add salt to taste

Charred Pineapple Salsa

1 ½ cups Charred Pineapple (small diced)

¾ cup Red Pepper (small diced)

½ cup Red Onion (small diced)

2 tablespoons Cilantro (minced)

1 teaspoon Lime Zest

3 tablespoons Fresh Lime Juice

½ teaspoon Salt

Directions

1. Cut off outside of Pineapple and put over a grill or open fire and charr the outside of the peeled Pineapple

2. In a large bowl, soak the Onion with the lime juice for 5 minutes then combine all of the ingredients and stir well.

3. Serve immediately or refrigerate in an airtight container for up to 3 days
